Coconut Curry Spicy Almonds

We can't get enough of this new recipe, so much so that this mix was gone after a day... SO good, and great for running errands, tailgating, cheering on football games, pumpkin patches or even sitting at the computer.
 
Ingredients: 
  • 2.5 cups of raw almonds
  • 1/4 cup of honey; we used Tennessee Artisan Honey Dark Wildflower 
  • 1 tsp of cayenne; More or less if you would like the almonds to be spicier or less
  • 1/8 cup of sugar
  • 1/2 cup of your favorite Nola Granola; we used Coconut Curry. Thai Peanut would be a fantastic option as well!
  • Salt to taste

 

 

Instructions:

  • Preheat your oven to 350F
  • Line a baking sheet with parchment paper
  • Pour honey into a skillet over medium heat until melted into a liquid state
  • Add the almonds to the skillet of honey & pour the cayenne to combine. Mix until the almonds are fully coated
  • Spread the almonds in a single layer onto the lined baking sheet
  • Put it into the oven for 10 minutes
    • We found 10 minutes made the almonds just over the point of roasted, add a couple more minutes if you'd like them more well done
  • While the almonds are baking, mix together the granola & sugar in a large mixing bowl
  • Remove from the oven & cool for 4 minutes
  • Toss the almonds into your separate granola & sugar mixture 
  • Put the almonds & now granola mixture back onto the baking sheet or on a new parchment paper to cool completely
